Ingredients
- 1 kg pumpkin (se), (e.g. Hokkaido)
- 500 g potato (s)
- 125 g carrot (s)
- 1 medium onion (s)
- 1 liter vegetable stock
- milk
- 1 chilli, depending on size
- 1 spring onion (s)
- salt and pepper
- oil
- possibly pumpkin seed oil

- Dice the onion and fry in a little oil. When the onion cubes are golden brown, deglaze with the vegetable stock and bring to the boil.
- Wash and dice the pumpkin, carrots and potatoes (I did not peel the Hokkaido pumpkin, as it gives it a nice strong color and taste) and then add to the vegetable stock. Let the vegetables simmer for approx. 40 minutes on a low level until soft. Now puree everything and determine the desired consistency with the milk. Now season a little with salt and pepper
- Chop the chilli and the spring onion into small pieces. Sear the chilli with the spring onion in a pan (you can still keep the leek greens, e.g. to decorate the soup). Put some chili and spring onion in the soup plate, add the soup and you`re done (if necessary, decorate or refine with pumpkin seed oil and / or the leek greens).
