Creamy Tomato Chicken Soup with Tortellini

Creamy tomato chicken tortellini soup for real gourmets.

Ingredients

  • Olive oil
  • 1 small onion
  • 3 cloves of garlic, chopped
  • 6 chicken link sausages (I used various garlic and mozzarella), chopped
  • 4 cups chicken stock
  • 800 g diced tomatoes
  • 400 gr tomato sauce
  • 1 large courgette, sliced
  • 550 frozen tortellini (dumplings)
  • 4 cups spinach
  • ½ cup heavy cream
  • ½ cup Parmesan cheese
  • ¼ cups of fresh basil,
  • 2 tablespoons fresh parsley
  • Salt and pepper for flavour
  • Optional basil and parmesan cheese for serving

Directions

  1. Grease the bottom of a large roasting pan with olive oil and heat over medium heat. Add the onion and cook until soft, about 4 minutes. Add garlic and fry until aroma appears. Add the chopped chicken sausage and cook, stirring occasionally, until warm.
  2. Add to chicken broth, chopped tomatoes and tomato sauce and bring mixture to a boil. Add zucchini and cook for 2 minutes, then add frozen dumplings and cook for another 5 minutes.
  3. Remove mixture from heat and stir in spinach. Combine cream, parmesan cheese, basil and parsley. Season to taste with salt and pepper, if necessary. Serve warm, garnished with fresh basil and Parmesan cheese.
