Ingredients

  • 540 ml cream
  • 7 egg yolks
  • 136 grams sugar
  • 2 vanilla pod (s)
  • 2 tonka bean (s)

Instructions

  1. Lightly crush the tonka beans and add them to the cream. Scrape out the vanilla pods and bring to the boil together with the cream. Let it steep for 30 minutes.
  2. Beat the egg yolks and sugar very lightly on a water bath. Pour the cream mixture into the egg mixture, stir and pour into ovenproof bowls.
  3. Poach in a preheated oven at 130 ° C for approx. 25 minutes in a water bath.
  4. A chocolate ice cream made from dark chocolate goes perfectly with it.
