Ingredients

  • 500 g chicken or turkey breast cut into bite-sized pieces
  • 2 zucchini, cut into strips
  • 1 onion (s), red, cut into rings
  • 1 bunch spring onions, cut into rings
  • 2 banana (s), sliced
  • 2 tablespoons oil
  • 200 ml coconut milk
  • 200 ml vegetable broth or poultry broth
  • 100 ml white wine
  • 1 teaspoon curry
  • 0.5 teaspoon ½ paprika powder, noble sweet
  • 0.25 teaspoon ¼ cayenne pepper
  • salt

Instructions

  1. Sear the meat in the oil, then add the zucchini and onions. Fry everything together for 5 minutes. Then add coconut milk, vegetable stock and wine, season with salt, curry, paprika and cayenne pepper and simmer for 10-15 minutes.
  2. Finally fold in the banana slices, season with salt and simmer for another 5 minutes.
