Cucumber Kimchi

We offer a recipe for an interesting cucumber snack called “kimchi”. Kimchi is a spicy snack in Korean cuisine. The preparation is quite simple and quick.

Ingredients

  • Cucumbers – 1 kg
  • Carrots – 1 pc.
  • Green onions – 0.5 bunch
  • Small onions – 1 pc.
  • Garlic – 4 cloves
  • Water – 0.25 cups
  • Hot pepper, chopped (dried) – 3-4 rings
  • Soy sauce – 3 tbsp
  • Salt – 2 tbsp
  • Sugar – 1 tbsp
  • Sesame – 1 tbsp

Directions

  1. Wash and dry cucumbers thoroughly. We cut the cucumbers into four parts, without cutting to the end by about 1 centimeter.
  2. Salt the cut cucumbers thoroughly inside and outside. We leave aside for 10 minutes. After 10 minutes, stir the cucumbers so that they are well salted on all sides. We leave for another 10 minutes.
  3. After 10 minutes, drain the released juice and wash the cucumbers under running water.
  4. Finely chop the washed green onions. Peel the onions and chop them finely. Cut the garlic into very small pieces.
  5. Peel and grate the carrots in Korean style. (If there is no such grater, cut the carrots into thin strips.)
  6. Preparing the dressing. In a separate container, mix the soy sauce, sugar, hot pepper, water and sesame seeds. Mix thoroughly

  7. Combine carrots, garlic, onions and green onions together, mix. Add dressing to vegetables. Mix thoroughly.
  8. Fill the cucumbers with a mixture of spicy vegetables.
  9. Sprinkle sesame seeds over the cucumber kimchi before serving.
