Ingredients
- 1 cucumber (s), preferably organic
- salt and pepper
For the dressing:
- 40 ml balsamic vinegar, lighter
- 40 ml heavy cream
- 30 ml olive oil
- 1 tablespoon honey
- 1 tablespoon, heaped dill, fresh or frozen
- 1 teaspoon parsley, fresh or frozen
- 1 shallot (s)
- 1 teaspoon mustard, medium hot

- Wash the cucumber, peel if necessary, cut lengthways through the middle and then cut into thin slices. Cut the shallot into small pieces.
- Put all the ingredients for the dressing in a bowl and stir well until you can no longer see any lumps. Add the cucumber, pepper and salt and season the salad to taste.
- Let the salad rest in the refrigerator for approx. 10-20 minutes so that the full taste is developed.
