Cupcake “Vanilla Cloud”

On a cold autumn evening, I wanted something pleasant and sunny. This fluffy vanilla muffin with orange zest and cashew nuts is a great way to cheer you up. Such a porous and airy cake is obtained thanks to high-quality beating of the dough with a mixer.

Ingredients

  • Butter – 150 g
  • Eggs – 3 pcs.
  • Sugar – 1 glass
  • Flour – 1 glass
  • Baking powder – 2 teaspoon
  • Orange (zest) – 1 pc.
  • Cashews – 2 handfuls
  • Vanillin – 2 teaspoon
  • Powdered sugar (optional) – for sprinkling on the cake

Directions

  1. Beat butter and sugar with a mixer until smooth and fluffy.
  2. Add eggs one at a time and continue beating.
  3. Add sifted flour with baking powder to the egg-oil mixture. Beat at the lowest mixer speed.
  4. Add orange zest (orange peel layer, removed with a fine grater), vanillin, cashews (chopped in random pieces) and mix everything.
  5. Place the dough in a muffin pan and bake the vanilla muffin at 180 degrees for about 45 minutes.
  6. Sprinkle icing sugar on the vanilla cake and decorate as desired.
