Cupcake “Zebra” with Kefir and Vegetable Oil

I try to pamper my family with baked goods as often as possible – buns, pies, muffins, tortillas and pizza! Over the years, she has collected many secrets for perfect baking. Today I will share a recipe for the Zebra pie on kefir and vegetable oil. Heat eggs for the most perfect result! It always turns out to be a plus!

Ingredients

  • Kefir – 150 ml
  • Vegetable oil – 150 ml
  • Eggs – 4 pcs.
  • Sugar – 200 g
  • Flour – 300 g (2 cups of 250 ml)
  • Baking powder – 1.5 teaspoon
  • Cocoa powder – 2 tbsp

Directions

  1. Combine eggs with sugar, stir for a minute with a whisk.
  2. We send the cup to the “water bath” so that the bottom does not touch the water (moderate heating). Stirring constantly, wait for the sugar to completely dissolve. With this amount of sugar, eggs will not boil, do not worry.
  3. Then everything is as usual. Beat the egg mixture with a mixer. Okay, a few minutes, until thick foam and color change. Add kefir and vegetable oil. Whisk lightly. Only slightly! Because the eggs can fall off badly.
  4. Add baking powder to the flour, mix well. Add the flour in parts to the eggs and gently mix with a silicone spatula, using folding movements.
  5. In another bowl, mix cocoa with a small amount of dough. First, add a couple of tablespoons of dough, mix. Then, stirring, add the same amount so that the mixture is not very thick, and lumps do not form in the dough.
  6. Thus, mix half the dough with cocoa.
  7. We turn on the oven to heat up to 180 degrees. Grease the baking dish with butter and sprinkle with flour. I am using a round cupcake pan. To make it easier to pour the dough, I cover the protrusion in the center of the mold with cling film.
  8. Alternating white and chocolate dough, pour two or three tablespoons into the center. When all the dough has been poured, carefully remove the film.
  9. We bake Zebra cake on kefir and vegetable oil in a preheated oven for 40 minutes, temperature – 170-180 degrees. Focus on your oven.
  10. This “Zebra” cake never falls off, the dough does not crumble, it is moderately moist. Very tasty and there is always a uniform pattern in every piece of the pie. Try it, bake to your health!
