Cupcakes “Red Velvet”

Very bright, beautiful and delicate cupcakes prepared according to this recipe are direct “relatives” of the popular Red Velvet cake. Cream for cupcakes “Red Velvet” is made from cream cheese and butter – it keeps its shape perfectly and makes the cupcakes even tastier!

Ingredients

  • Flour – 220 g
  • Eggs – 2 pcs.
  • Butter, softened – 80 g
  • Vegetable oil – 80 ml
  • Kefir – 180 ml
  • Sugar – 150 g
  • Cocoa – 20 g
  • Soda – 1/2 teaspoon
  • Baking powder – 1 teaspoon
  • Salt – 1/3 teaspoon
  • Red food coloring – 1 teaspoon

  • For the cream:
  • Cream cheese – 300 g
  • Butter, softened – 120 g
  • Powdered sugar – 70 g
  • Vanilla sugar – 1 teaspoon

Directions

  1. Combine the sifted flour, baking powder, cocoa and baking soda.
  2. In butter, whipped with sugar, add eggs one by one, without stopping whipping.
  3. Add vegetable oil, kefir and dye to the same mass. Whisk well again.
  4. Combine dry and liquid ingredients and knead a light muffin dough with kefir. Do not knead for a long time, it is enough to get a homogeneous mass.
  5. Divide the dough into tins. Do not fill more than 2/3 of them. Bake the muffins for 20-25 minutes in an oven preheated to 175 degrees.
  6. During this time, make a buttercream for the cupcakes. To do this, whisk soft butter with powdered sugar and vanilla sugar, then stir with a spatula with cream cheese at room temperature. Cupcake cream can also be tinted a little.
  7. Decorate the cooled Red Velvet cupcakes with the prepared cream using a pastry bag.
