Curd with Poppy Seeds and Coconut

This is something like a curd casserole. Delicate, and even with poppy seeds and coconut. Tasty!

Ingredients

  • Butter – 150 g
  • Eggs – 4 pcs.
  • Cottage cheese – 750 g
  • Semolina – 75 g
  • Sugar – 125 g
  • Vanilla sugar – 1 sachet
  • Coconut flakes – 1 packet of white coconut flakes (40 g)
  • Poppy – 125 g
  • Canned pineapple – 5 rings for decoration (you can take other berries or fruits)
  • Pineapple juice – 100 ml (you can take orange juice)

Directions

  1. Separate the yolks from the whites.
  2. Mix the yolks with cottage cheese, semolina, granulated sugar, juice, and vanilla sugar. Add butter and mix well with a mixer or processor.
  3. Beat the whites separately and carefully combine with the curd mass. Divide the mass into two parts.
  4. Add coconut flakes to one part and stir well. In the second part – poppy seeds, and mix well too.
  5. Line the mold (18×27 cm) with parchment and grease with oil. With a tablespoon, alternately spread the masses with poppy seeds and coconut in a checkerboard pattern. First one layer, then the second on top. Put in an oven heated to 180 degrees for 50-60 minutes. Turn off the oven and leave the curd with coconut and poppy seeds in it for another 15 minutes.
  6. Then remove the cottage cheese with poppy seeds and coconut from the mold and cut into pieces. Cut the pineapple rings into 4 pieces and decorate the curd slices with them.
  7. Ready-made cottage cheese casserole with poppy seeds and coconut.
