Delicious and Tender Curd-Rice Casserole

Very tasty and tender curd-rice casserole. It tastes like a cross between a regular casserole and rice pudding.

Ingredients

  • Cottage cheese – 500 g
  • Butter – 80 g + for greasing the mold
  • Eggs – 3 pcs.
  • Round grain rice – 100 g
  • Raisins – 50 g
  • Sugar – 130 g
  • Vanilla sugar – 1 teaspoon
  • Salt – a pinch
  • For the filling (optional):
  • Whipped cream – 150 g
  • Frozen berries – 1 handful

Directions

  1. Prepare your ingredients. Instead of raisins, you can take other dried fruits: dried apricots, cranberries, or cherries. And for flavor, instead of vanilla, you can add a little lemon or orange zest. First, cook the rice: rinse thoroughly, cover with clean water in proportions 1: 2 and simmer until soft. Since round rice is very easy to digest, after boiling, I cook it for 5-7 minutes, turn off the heating, cover with a tight lid and leave for 15 minutes. Most often, the rice has time to reach readiness during this time, but it does not boil. Let the cooked rice cool completely. By weight of boiled rice should be about 250 g. Melt butter and cool. Rinse the raisins well and dry. In addition to products, you will need a baking dish with a diameter of 20-22 cm. If the form is not ceramic, prepare parchment.
  2. Since all cooking will take 15 minutes, turn on the oven right away to heat up to 180 degrees. Break the eggs, separate the yolks from the whites. Put cottage cheese in a bowl, add melted butter, sugar, yolks, vanilla sugar, and salt to it.
  3. Punch the mass with a blender until smooth.
  4. Add cooled rice and stir in with a spatula.
  5. Beat the remaining egg whites until crisp.
  6. In a few steps, mix the proteins into the curd-rice mass.
  7. Add washed and dried raisins. Stir.
  8. The baking dish should be laid out with parchment, but if you use a ceramic dish, then it is enough to grease it with a thin layer of butter. Put the curd-rice mass into the prepared dish and bake at 170-180 ° C for about 40-50 minutes.
  9. Allow the finished casserole to cool completely (this way it will hold its shape better when cutting) and remove it from the mold.

    When serving, I decorated the curd-rice casserole with whipped cream and a handful of berries, but you can simply serve it with sour cream, with your favorite jam or jam, honey, or chocolate icing!
