Delicious Ham at Home

I suggest making homemade ham. It is very convenient to use as a substitute for sausages for breakfast sandwiches. Besides, homemade ham is much healthier because it is made from natural meat.

Ingredients

  • Pork leg – 1-1.5 kg
  • Salt – 70 g (2 tablespoon. L.)
  • Bay leaf – 1-2 pcs.
  • Allspice peas – 4-5 pcs.
  • Cloves – 2-3 pcs.
  • Hot pepper (dried or fresh) – 1 pc.
  • Any seasonings – to taste
  • Water – 1 l

Directions

  1. Pour water into a saucepan, add salt, all seasonings, hot pepper. Bring to a boil, stir in salt and let cool brine.
  2. The meat must be washed and with a syringe prick with brine from all sides. The bigger, the better.
  3. When tired, put the meat in the strained remaining brine.
  4. Press down the meat with a small weight and refrigerate. The meat should be in the brine for three days. During this time, it can be turned over a couple of times.
  5. When the meat is salted, boil it.
  6. You can tie the meat tightly with twine or wrap it in cling film and fasten it with twine.
  7. Pour water into a saucepan and place the meat there so that it is completely covered with water. Heat water up to 80-85 ° С, no more. You need to cook the ham at this temperature, not higher, until the temperature inside the piece of meat reaches 77 ° C. For a piece like mine, this is about 2 hours, for a more round one – 2.5 hours.
  8. When the desired temperature inside the meat is reached, drain the hot water and pour cold water. Keep the meat in cold water for 5 minutes. Remove the ham from the water and put in the foil in the refrigerator until it cools completely for several hours.
  9. It is very important that the temperature during cooking does not rise above the specified paras, otherwise you will get a dryish piece of boiled meat, and not a juicy ham.
  10. To be honest, the result exceeded expectations. Homemade ham turned out to be very tasty.
