Delicious Vegetable Soup with Tortellini

Now the stores sell ready-made tortellini, they can be prepared with sauce, or they can be added to vegetable soup, as in this recipe.
Servings: 10
Ingredients
- Onions (finely chopped) – 1 pc.
- Celery stalk (finely chopped) – 2 pcs.
- Vegetable oil – 2 tbsp
- Beef broth – 900 g
- Frozen corn – 1 glass
- Frozen carrots (cut into slices) – 1 glass
- Frozen green beans – 1 cup
- Potatoes (peeled and diced) – 1 glass
- Dried basil – 1 teaspoon
- Dried thyme – 1 teaspoon
- Chives or green onions (finely chopped) – 1 teaspoon.
- Canned tomatoes without skin (finely chopped) – 900 g
- Cheese or meat tortellini
Directions
- Heat vegetable oil in a large cast-iron saucepan (cauldron), add onion and celery, fry, stirring occasionally, for about 3 minutes, then add broth, add corn, carrots, beans, potatoes, basil, thyme and green onions, bring to a boil.
- Reduce heat, cover pot and cook soup for 10-15 minutes, until potatoes are soft.
- Put chopped tomatoes and tortellini in a saucepan with soup, cook, uncovered, for 4-5 minutes, until tortellini is done.
