Ingredients

  • 2 leg (s), (duck)
  • 6 shallot (s)
  • 1 onion (s), red
  • 1 teaspoon sugar
  • 1 small Bottle / s sparkling wine, dry
  • 4 tablespoon jam, (sour cherry)
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon, heaped vegetable stock, instant
  • 6 sprigs thyme, fresh
  • 2 bay leaves
  • salt and pepper
  • oil

Instructions

  1. First, puree the sparkling wine, cherry jam, balsamic vinegar and vegetable stock powder in the blender. Peel and finely chop the onion. Peel the shallots, but leave them whole.
  2. Heat the oil, fry the onions and shallots in it until they are translucent. Then add the sugar and continue to fry for 1-2 minutes, stirring vigorously, so that it caramelizes a little. Deglaze with the sparkling wine mixture and simmer for about 10 minutes.
  3. Meanwhile, sear the duck legs in a non-stick pan, then season with salt and pepper.
  4. Put the champagne sauce with the shallots in the crockpot / slow cooker.
  5. Spread the thyme sprigs and bay leaves on the surface.
  6. Place the duck legs on top. Cooking time in the crockpot / slow cooker 5 hours.
