Egg Envelope with Cheese

A simple and hearty dish with a minimum of ingredients – egg envelopes with cheese filling. Such envelopes are prepared very quickly and not difficult at all. Just 5 minutes – and a delicious breakfast is ready!

Ingredients

  • Eggs – 2 pcs.
  • Hard cheese – 50 g (1-2 slices)
  • Salt to taste
  • Vegetable oil (for frying) – 1 tbsp

For the filling (optional):

  • Fresh parsley – 1-2 branches

Directions

  1. We prepare products according to the list
  2. Break eggs into a bowl. Salt to taste (cheese contains salt, so you need to salt carefully).
  3. Beat with a fork until smooth.
  4. Heat vegetable oil in a frying pan over medium heat. Pour in the egg mixture and spread over the bottom, gently tilting the pan to the sides and forming a thin pancake. Fry over medium heat for about 1-2 minutes, until the edges of the pancake set and the middle remains liquid.
  5. Place the cheese slices in the center of the egg pancake and cook for about 1 minute more.
  6. As soon as the cheese begins to melt, gently fold the edges of the pancake, forming an envelope. To do this, first tuck and cover the filling with two opposite edges of the pancake.
  7. Then we fold the other two free edges. Lightly press the resulting envelope with a spatula for a few seconds to seal the edges of the spring roll in this position.
  8. Then carefully turn the filled egg envelope with the seam down and fry for about 20-30 seconds.
  9. The rosy egg envelope with cheese filling is ready. We transfer the dish to a plate.
