Instructions

  1. Cook the rice with the water and a little salt as directed.
  2. In the meantime, heat the olive oil in a pan and briefly fry the diced onion in it. Then add the chopped aubergine, sauté briefly, finally add the chopped tomatoes and spices to taste and let simmer covered for a few minutes over low heat.
  3. Serve with the rice.
