Ingredients

  • 100 g lemon peel
  • 100 g orane peel
  • 3 egg (s), (size M)
  • 200 g suar
  • 1 pinch clove powder
  • 1 pinch mace, acc.
  • 1 teaspoon cinnamon, acc.
  • 125 g almond (s), acc.
  • 125 g walnuts, accordin to
  • 35 wafers, size. 5 cm
  • 100 g couverture

Instructions

  1. Chop the lemon peel and orange peel in a moulinette.
  2. Beat eggs with sugar until frothy.
  3. Then add all the remaining ingredients and mix well together.
  4. If the dough is still a little too soft: you have to stir it really well with a mixer and, if necessary, you can then leave it to stand for a short time so that it attracts a little.
  5. Then, with the help of a spatula, pour the dough into the gingerbread bell in portions and smooth it out.
  6. Press a wafer on top and place the whole thing upside down on a prepared baking sheet.
  7. Put the full tray in the preheated oven and bake at 150 ° C hot air for about 20-25 minutes.
  8. Let cool down completely and then decorate with melted couverture.
  9. It is best if the gingerbread has a few days to steep.
  10. But then they are really good and nice and soft.
  11. If you don`t have a gingerbread bell: That`s not too tragic.
  12. Simply spread the dough on the wafers in portions and then continue according to the recipe!
  13. They get nicer with the bell, though, I don`t want to deny that.
