Ingredients

  • 400 g beans (French beans)
  • 2 onions)
  • 3 tomato (s)
  • 2 zucchini
  • 1 chilli pepper (s), possibly 2
  • 2 tablespoon tomato paste
  • 1 tablespoon herbs, Italian (frozen)
  • 1 leek
  • salt and pepper
  • ml 1,250 vegetable stock
  • 2 tablespoon olive oil

Instructions

  1. Cut the onions into small pieces and sauté them in the olive oil in a large saucepan. Cut the beans, tomatoes, zucchini, leek and the chilli into small pieces.
  2. Add the stock to the onions in the saucepan. Then add the vegetables, tomato paste and the herbs. Let everything simmer for about 40 minutes and season with salt and pepper.
