Ingredients

  • 4 thin tortilla (s), wheat

For the filling:

  • 2 tablespoons oil
  • 1 large onion (s), diced
  • 300 g minced meat, (round beef), or mixed
  • 2 carrot (s)
  • 0.5 can ½ corn
  • 0.5 can ½ beans
  • salt and pepper
  • Vegetable broth, instant
  • Chili powder
  • Paprika powder, noble sweet
  • Chilli pepper (s), (Jalapenos), in rings
  • oregano
  • 1 clove garlic

For the sauce:

  • 600 g crème fraîche, (30% fat)
  • 3 cloves garlic, (pressed or grated)
  • 200 ml milk
  • 100 g cheese, (Emmentaler) rated
  • cheese, for sprinkling
  • salt and pepper

Instructions

  1. Briefly sauté the onion in the oil. Fry the minced meat until it is crumbly. Meanwhile, cut the carrots into small thin strips. Now season with spices and finally add corn and beans. Add some of the canned corn or bean juice.
  2. For the sauce, mix creme fraiche, pressed garlic, salt, pepper, grated cheese and milk.
  3. Preheat the oven to 200 degrees Celsius.
  4. Put wheat tortillas in the microwave for a maximum of 30 seconds (this makes them softer and easier to roll).
  5. Now put the filling in the middle of the tortillas, roll up and fix with 2 toothpicks. Cover the bottom of the baking dish with a little sauce and place the tortillas on top. Now distribute the jalapenos on top. Now pour the rest of the sauce over them so that they are completely covered or only peek out a little. Sprinkle cheese on top and put in the oven. Bake at 200 degrees for 1/2 hour.
