Ingredients
- 1 liter meat broth, or poultry or vegetable broth
- 3 sweet potato (s)
- 3 tomato (s)
- 250 ml coconut milk, from a can
- 1 tablespoon peanut cream
- 1 clove (s) garlic
- 0.5 ½ chilli pepper (s), hot
- some ginger
- some curry paste
- 1 dash soy sauce
- possibly crème fraîche
- Parsley, chopped

- Prepare poultry meat or vegetable broth beforehand (better) or use instant broth.
- Cut the sweet potatoes into smaller pieces. Put tomatoes in boiling water until skin flakes, peel them under cold water.
- Add the potatoes, tomatoes with a little ginger, chilli peppers and garlic clove to the broth and cook for about 20 minutes.
- Puree with a hand blender (remove the chilli pepper and garlic beforehand, if necessary).
- Add coconut milk and peanut cream. Add some curry paste and soy sauce depending on your taste. The soup should be slightly creamy; add some water if necessary. If the soup is a little too sweet, a little crème fraîche can be added if necessary. The soup should be slightly spicy, or hotter depending on your preference.
- Garnish with parsley to serve.
