Festive Cookies “Mandarin Duck” from Almond Flour

I love baked goods with almond flour very much – it gives the product a special structure and taste. Almond flour cookies are crumbly, very tender, moderately sweet, aromatic and spicy. And tangerines give the liver a special charm and beauty. A box of such shortbread cookies with tangerines on the festive table will not leave anyone indifferent.

Ingredients

  • Medium tangerines – 4-5 pcs.
  • Almond flour – 200 g
  • Wheat flour – 200 g
  • Butter – 150 g
  • Egg yolk – 3 pcs.
  • Powdered sugar – 100 g + for decoration
  • Orange (zest) – 2 teaspoon
  • Orange juice – 2 tbsp
  • Salt – 1 pinch
  • Ground spices (cinnamon, nutmeg, star anise, cardamom, cloves) – 1 teaspoon

Directions

  1. Prepare ingredients.
    Sift flour and icing sugar.
    Butter and yolks – at room temperature.
    Spices – at will, I have: cinnamon, nutmeg, star anise, cardamom, cloves.
    Remove the zest from one orange using a fine grater. Squeeze 2 tablespoon from the same orange. spoons of juice.
  2. Beat the softened butter with powdered sugar until white.
  3. Then add two yolks and beat until fluffy and smooth.
  4. Then add salt, zest, juice, spices there and beat again.
  5. Then add all the flour and mix well.
  6. The dough should be smooth, well-kneaded, non-sticky and soft.
  7. Divide the dough into 2 equal portions.
  8. Form the dough into sausages about 5 cm thick.
  9. Wrap the dough in a bag or plastic wrap and refrigerate for 3 hours.
  10. When the rest time of the dough comes to an end, prepare the tangerines.
    Wash, wipe dry and cut into slices about 0.5 cm thick.
  11. Put the tangerines on a paper towel and leave for 10-15 minutes. Then on a new towel, do the same with the back of the tangerine slices.
  12. When the dough has rested, “adjust” the size of the sausage to the size of the mandarin. Rather, the dia of the dough should be slightly larger than the tangerine slices.
  13. Cut the dough into 15 equal pieces.
  14. Place the cookie cutters on a lined baking sheet.
  15. Turn on the oven to heat up to 170 degrees.
    Now you need to take a mold (or a glass, or a glass) in diameter like a tangerine.
  16. Dip the bottom of the mold in sugar. If the sugar does not stick, you can moisten it with water.
  17. In the center of the cookie cutters, make small indentations for the tangerine. The mold must be dipped in sugar every time.
  18. Grease the edges with shaken yolk.
  19. Put a circle of tangerine in the center and seal it slightly. Sprinkle sugar on top.
    Send to preheated oven and bake cookies for 25-30 minutes, until tender.
  20. My cookies were baked for 30 minutes.
    While the cookies are hot, they are very fragile. Let the liver cool slightly.
  21. Then put the tangerine cookies on the wire rack and leave to cool completely.
  22. Place the almond flour Tangerine cookies on a platter or plate.
  23. Can be lightly sprinkled with powdered sugar.
  24. You can invite everyone for tea.
    I draw your attention to the fact that the tangerines are in the peel, which after baking has become drier and harder.
