Festive Light Salad with Salmon and Avocado (no Mayonnaise)

If you are looking for a new salad recipe for the New Year without using mayonnaise, I recommend preparing a salad with a delicious and balanced dressing based on soy sauce and vegetable oil. Salad with red fish, cucumber, bell pepper, avocado – a real riot of tastes and aromas, a very juicy and light salad. After such a dish, you and your guests will not feel heavy. Perfect for a festive table.

Ingredients

  • Salted red fish (salmon) – 200 g
  • Avocado – 1 pc.
  • Bulgarian pepper – 100 g
  • Fresh cucumber – 100 g
  • Red onion – 30 g
  • Iceberg salad and arugula (or salad mix) – 200 g
  • Sesame seeds – 10 g

For refueling:

  • Soy sauce – 4 tablespoons spoons
  • Vegetable oil – 2 tbsp
  • Dijon mustard – 1 tbsp
  • Honey – 1 teaspoon

For pickling onions:

  • Apple cider vinegar – 0.5 teaspoon
  • Sugar – 1 pinch
  • Salt – 1 pinch

Directions

  1. Chop the onion into thin feathers, add a few drops of apple cider vinegar, a pinch of sugar and salt. Leave the onions to marinate while we work on the other ingredients.
  2. Cut the cucumbers into thin long strips.
  3. Cut the bell peppers into strips.
  4. Peel a ripe avocado (if the avocado is ripe, then the skin can be easily removed by hand) and cut into slices.
  5. Coarsely chop the arugula. Cut or tear the iceberg salad with your hands.
  6. Salmon cut into slices.
  7. Lightly fry the sesame seeds in a pan, stirring occasionally.
  8. For the sauce, combine soy sauce, vegetable oil, mustard and honey and beat well with a fork.
  9. Collect the salad just before serving, otherwise the greens and vegetables will lose their freshness. In a bowl, combine lettuce, cucumber, bell pepper and pickled onion and stir. Add a third of the cooked sauce, stir.
  10. Put on a plate a part of the prepared mixture of lettuce leaves with vegetables, top with fish and avocado, then again salad with vegetables, pieces of salmon and avocado.
  11. Pour the remaining dressing over the salmon and avocado salad and sprinkle with sesame seeds. Serve the salad immediately!
