Ingredients

  • 1 kg fig (s)
  • 500 g preservin suar, 2: 1
  • 1 lemon (s), untreated, which zest and juice
  • 125 ml water
  • 100 g walnuts, rouhly chopped
  • 100 g suar
  • 1 teaspoon salt, (Fleur de Sel)

Instructions

  1. Melt the sugar in a pan, add the roughly chopped walnuts and caramelize. Put the mixture on baking paper and let cool down.
  2. Then chop the nuts with a rolling pin and add the fleur de sel and mix everything well.
  3. Cut the figs into large pieces and bring to the boil with the water. Simmer over low heat until they crumble and become mushy.
  4. Then add the preserving sugar as well as the juice and the grated zest of the lemon, simmer for about 5 minutes. Remove the pot from the stove, add the nuts, mix everything well and immediately pour into hot rinsed glasses and close tightly.
