Ingredients

  • 0.5 kg ½ jacket potato (s)
  • 0.5 kg ½ minced meat
  • 5 small Bockwurst or Wiener
  • 1 large onion (s)
  • 2 egg (s), hard-boiled
  • 2 glasses mayonnaise
  • 1 glass cucumber (s), gherkins (and cucumber water without herbs)
  • Margarine, for frying
  • salt and pepper

Instructions

  1. Peel the jacket potatoes while hot, cut them into slices and place in a large salad bowl. Pour the mayonnaise from the glasses over the potato slices with a tablespoon. Put the cucumber water in the majo jars (quarter full), put the lid on, shake and pour into the bowl (this is how you get everything out of the jar).
  2. Stir with a large spoon if the mayonnaise is not yet smooth enough, add cucumber water if you like!
  3. Season the minced meat with salt and pepper, season to taste. Now heat “Sonja” (frying fat / margarine) in a pan on the stove, add minced meat until it is gray in color (pound with a potato masher), then add to the potato salad and fold in.
  4. Cut the sausages into slices, fry them in the pan until crispy, add diced onion pieces, fry them briefly, not too long! Then add the contents of the pan to the potato salad with a ladle. Mix well. Now either cut or dice the hard-boiled eggs and fold in as the last ingredient, stir gently, done!
  5. P.S .: To use up the cucumbers, I serve them as a side dish on a plate !!
