Fish, Baked with Spinach and Tomatoes, with Rice

This dish is a great option for a simple and quick lunch or dinner. Juicy fish, aromatic tomatoes, and spinach go well with each other, giving a great taste. Rice will perfectly complement the baked fish and make the dish more satisfying.

Ingredients

  • Fish fillet (hake, pollock, cod) – 0.8-1 kg
  • Tomatoes – 3 pcs.
  • Bulb onions – 1 pc.
  • Spinach – 100-150 g
  • Garlic – 3 cloves
  • Fresh herbs (parsley, dill) – 30-50 g
  • Vegetable oil – 3 tbsp
  • Dried oregano – 1 pinch
  • Dried basil – 1 pinch
  • Stewed thyme – 1 pinch
  • Ground black pepper – to taste
  • Salt to taste
    For garnish:
  • Rice – 200-300 g
  • Salt to taste

Directions

  1. Cut the onion into cubes.
  2. Fry the onions in vegetable oil until soft.
  3. Rinse the spinach and cut it into strips.
  4. Add the spinach to the onion and fry for 2-3 minutes.
  5. Place the spinach and onions in a baking dish.
  6. We wash the fish and cut it into portions.
  7. Rub each piece of fish with salt and pepper, put in a mold.
  8. Peel and chop the garlic. Turn on the oven 180 degrees.
  9. Chop the greens not too finely.
  10. Cut the tomatoes into slices.
  11. Sprinkle the fish with half the garlic.
  12. Then sprinkle with dried herbs and fresh herbs.
  13. We lay the tomatoes.
  14. Salt, pepper, and sprinkle with the remaining garlic. We send to bake in the oven for 30 minutes at a temperature of 180 degrees.
  15. Pour water into a saucepan (water should be twice as much as rice). We put on the heating.
  16. We wash the rice thoroughly.
  17. Put rice in boiling water. Salt and cook rice for 15 minutes or according to the instructions on the package.
  18. Serve fish baked with spinach and tomatoes with rice.
