Fish Baked with Vegetables in a Pot

I like to fish with vegetables. I cook in the oven in a ceramic pot. I bake fish with potatoes, bell peppers, zucchini, celery. Vegetables and spices can be changed according to taste and season. You can take almost any fish from which you can make a fillet. I usually use white sea fish.

Cook: 1 hour 30 minutes

Servings: 6

Ingredients

  • Hake (pollock, cod) – 1 kg (weight of peeled fish without head)
  • Potatoes – 1-2 pcs.
  • Young zucchini – 1 pc.
  • Sweet pepper – 1 pc.
  • Scallet herring – 1 stalk
  • Carrot – 1 pc.
  • Bulb onions – 2 pcs.
  • Garlic – 3 cloves
  • Tomato juice – 100 ml
  • Fresh herbs (dill and parsley) – to taste
  • Seasoning (I have a dry ground mixture of coriander, thyme, red pepper and curry) – 1 teaspoon
  • Salt to taste
  • Ground black pepper – to taste
  • Bay leaf (optional) – 2 pcs.
  • Peppercorns (optional) – 8-10 pcs.
  • Vegetable oil (for frying) – 5 tbsp
  • Flour (for breading fish) – 50 g (3 tablespoons)

Directions

  1. Use a sharp knife to cut the fish fillet, separating the ridge and swimmers. Peel the fillet.
    Cut into random pieces (I have pieces of hake the size of a matchbox).
  2. Salt and pepper the fish (it is convenient to do this on the kitchen board). Leave it on for 15-20 minutes.
  3. Wash the zucchini, cut into cubes (1×1 cm). I don’t peel the zucchini – it’s young and the skin is tender.
  4. Peel the garlic, chop finely. Peel the carrots and cut into small pieces or cubes. Cut the celery stalk into slices. Remove seeds from sweet peppers, cut into cubes.
  5. Peel the onion, chop finely.
  6. Roll the hake pieces in flour.
  7. Preheat a frying pan, pour in half the oil. Put prepared fish in hot oil.
  8. Fry hake fillets on both sides until golden brown over medium heat (1-2 minutes on each side).
  9. Put the fried fish on a plate.
  10. Heat the other half of the oil in a clean skillet. Put onions and carrots in hot oil. Fry over medium heat, stirring occasionally, for 2-3 minutes.
  11. Add celery, bell peppers and zucchini to the pan. Fry vegetables, stirring occasionally, for another 2-3 minutes.
  12. Add garlic to the pan with vegetables. Fry one more minute. Season with salt, pepper and seasoning. Mix everything.
  13. Peel the potatoes and cut into cubes as you would cut a courgette.
  14. Put bay leaves and peppercorns on the bottom of a ceramic pot. Spread out evenly dense layer of potatoes.
  15. Put half of the fried vegetables on the potatoes.
  16. Put all the fried fish on the vegetables.
  17. Put the other half of the vegetables on the fish. Condense everything. You can add 50 ml of boiling water to a pot of fish and vegetables (my vegetables are juicy, I did not pour).
  18. Cover the pot with a lid, put in a cold oven. Turn on the oven, set the temperature to 180 ° С. Bake hake fillets with vegetables for 40 minutes.
  19. Remove the pot from the oven, pour the tomato juice over the vegetables.
  20. Return the pot to the oven. Bake the fish and vegetables for another 20 minutes.
  21. Hake baked with potatoes and a mixture of vegetables is ready.
  22. Chop the greens (I have parsley with dill). Sprinkle herbs over the finished dish and serve.
