Ingredients

  • 700 g fish fillet (s), e.. redfish or saithe
  • 0.5 teaspoon ½ salt
  • 0.5 teaspoon ½ pepper
  • 2 tablespoon cornstarch
  • 200 ml oil, neutral
  • 4 shallot (s), cut into wedges
  • 0.5 stick ½ lemongrass, only from the white, finely chopped
  • 1 chilli pepper (s), finely chopped
  • 2 cm ginger, grated
  • 0.5 teaspoon ½ shrimp paste
  • 125 ml water
  • 1 tablespoon Ketjap Manis
  • 1 tablespoon soy sauce
  • 1 tablespoon sugar, brown
  • 0.5 ½ lime (s), the juice from it
  • 3 spring onions, cut into thin rings

Instructions

  1. Cut the fish into strips, season with salt and pepper and turn in the cornstarch. Fry all over over high heat, drain on kitchen paper.
  2. Heat 2 tablespoons of the frying oil in a wok or pan and stir-fry the shallots, lemongrass, chilli, ginger and shrimp paste for 3 minutes. Add the water, soy sauce, ketjap manis and sugar and let it boil down a little. Add the lime juice, spring onions and fish strips.
  3. Serve with rice.
