Fish with Herbs

You can experiment with different herbs in this fish dish as you like, to your liking. But remember to strike a balance between a strong aroma (like dill or thyme) and “soft” herbs (like parsley).

Servings: 4
Ingredients
- Olive oil – 1 tbsp
- Fillet of sea fish (snapper or other white fish) – 4 pcs.
- Salt
- Pepper
- Dijon mustard – 2 tbsp
- Fresh herbs (mixture), finely chopped – 0.5 cups
- Couscous (for garnish, optional)
Directions
- Preheat oven to 190 degrees. Place fish chunks skin side down on a cutting board.
- Sprinkle the fish with salt and pepper and brush each piece with 1.5 teaspoons. mustard.
- Dip the greased side of the fish into the chopped greens and press lightly.
- Brush a baking sheet with olive oil, place the fish skin side down and bake in the oven for 12-15 minutes. Serve hot with couscous (or another side dish of your choice).
