Fish with Shrimps, in a Creamy Sauce

Baked fish with shrimps, a recipe for cooking in a creamy sauce. A cheese-like golden crust forms on the surface of the dish.

Servings: 4

Ingredients

  • Fillet of salmon, trout, or cod – 400 g
  • Large shrimps (peeled) – 200 g
  • Fish broth – 1 l
  • Butter – 100 g
  • Flour – 50 g
  • Dry white wine – 100 g
  • Fat culinary cream – 100 g
  • Hard cheese (chopped on a grater) – 120 g
  • Fresh parsley (chopped) – 45 g (3 tablespoons)
  • Salt to taste
  • Ground white pepper – to taste
  • Rustic bread for serving (optional)
  • Mold oil

How to cook fish baked with shrimp:

Directions

  1. Turn on the oven to preheat to 200 degrees. Grease a 1.2-liter ovenproof dish (or several portion molds).
  2. Cut the fish fillet into cubes.
  3. In a large saucepan, bring the fish stock to a boil, place the fish in it, reduce the heat and cook the fish for about 2 minutes (do not overcook).
  4. Remove the fish from the pan with a slotted spoon and transfer to the prepared dish. Season the fish with salt and pepper, cover the dish to keep the fish warm.
  5. Heat butter in a large skillet over medium-high heat. Pour flour into the pan, stir, cook for about 2 minutes.
  6. While stirring, add 2 cups of fish broth to the pan. Add wine to the pan, cook, stirring occasionally, for about 3 minutes, then add the cream. Season with salt and pepper and cook for about 1 minute.
  7. Remove the pan from the stove, add almost all the crushed cheese (leave about 3 tablespoons for the powder). Add shrimps and 1 tablespoon of parsley to the sauce, pour this sauce over the fish in a mold, sprinkle with the reserved cheese on top.
  8. Place the fish dish in a preheated oven, bake for about 10-15 minutes, until the top is golden brown. Sprinkle parsley over the finished dish and serve immediately. Serve fish baked with shrimps with rustic bread (optional).
