“Forgotten” Cookies with Nuts and Chocolate

Today we are preparing an amazing cookie from egg whites with nuts and chocolate that just melts in your mouth! The cookie is called “forgotten”, because after baking you need to forget about it for two hours. Everyone who tries this cookie will love it! This recipe combines the simplicity of making a cookie and its delicate flavor!
Ingredients
- Egg whites – 2 pcs.
- Sugar – 100 g
- Vanilla sugar – 10 g
- Peanuts (or other nuts) – 100 g
- Black chocolate – 50-70 g
Directions
- Chop the pre-fried and peeled peanuts with a knife, not too finely so that the pieces of nuts are felt. (Peanuts can be substituted for any other nuts you like.)
- Chop the dark chocolate finely, but also so that the pieces are felt.
- Whisk the whites with sugar and vanilla sugar into a strong foam. I beat at first at the minimum speed of the mixer for 30 seconds, then increase the speed to maximum and, gradually adding sugar, beat for another 5-7 minutes.
- I beat the whites until the so-called “hard peaks”. The beaten egg whites should remain stationary when turning the bowl over.
- Add chopped nuts and chocolate to the whipped egg whites and mix gently.
- On a baking sheet lined with parchment paper, spread the whipped protein mass with a spoon at a distance from each other (as the cookies will increase in volume). Smooth out a little, forming a cookie. It is better to make it flat than convex, so that the protein cookies will crack less.
- We bake chocolate-nut cookies in the oven, preheated to 180 degrees, for 5 minutes. Then turn off the oven and leave the protein cookies in the off oven for 2 hours. The oven door must not be opened.
- The “forgotten” cookies with nuts and chocolate are ready! Look how soft and airy it is in the rift! And what delicious is difficult to convey in words!
