Quarter the cherry tomatoes and cut into small cubes. Salt and drain in a colander for 10 minutes.
In a bowl, mix the drained tomatoes with the onion, jalapeño, coriander greens and lime juice. Season with salt and, if necessary, a little more lime juice, until you find your own taste. Let it steep in the refrigerator for at least 30 minutes.
Serve with guacamole and tortilla chips.
This recipe uses cherry tomatoes because I find these are most flavorful when they are not home grown. Tomatoes from your own garden are always preferable!
