Instructions

  1. Cut the pumpkin pulp into strips (like French fries), then cook in salted boiling water for about 10 minutes, drain and drain.
  2. Season the chicken with salt and pepper, fry briefly on one side in 1 tablespoon of clarified butter in an ovenproof pan, then turn and fry in a preheated oven (180 °) for about 10 minutes.
  3. Divide broccoli into florets and cook in salted boiling water for about 5 minutes. Fry the pumpkin vigorously in the remaining clarified butter for 2 - 3 minutes, season with salt and pepper.
  4. Mix the creme fraiche and lemon juice and season with salt and pepper. Cut the coriander into small pieces.
  5. To serve, cut the chicken into thick slices and arrange on plates with the pumpkin, broccoli and walnuts. Drizzle the chicken with a little seasoned creme fraiche and garnish with coriander.
