Ingredients

  • Rice, cooked (approx. 2 cups)
  • 150 g shrimp, prawns or similar
  • 200 g ham, cooked
  • 4 egg (s)
  • 3 spring onion (s)
  • 200 g veetables (Chinese veetables), mixed
  • 1 teaspoon soy sauce
  • 1 teaspoon ginger, grated
  • 1 teaspoon honey
  • 1 clove garlic
  • 3 tablespoon tomato ketchup
  • 2 tablespoon oil (germ oil)

Instructions

  1. Make a marinade with ketchup, honey, grated ginger and soy sauce. Place the praws, shrimp or prawns in the marinade and let it steep for at least two hours.
  2. Cut the ham into cubes.
  3. Blanch finely mixed vegetables (carrots, mushrooms, etc. or a frozen mixture of Chinese vegetables). 2 cups of vegetables are enough. Whisk the eggs.
  4. Heat the oil in a wok, fry the vegetables briefly in the hot oil and remove. Fry the finely chopped spring onions in hot oil and remove.
  5. Turn the marinated praws / shrimps in the hot oil for 5 minutes and remove.
  6. Place the beaten eggs in the hot and now flavored oil, reduce the heat and let the eggs set. When the eggs are set, tear the mixture apart with a shovel. Then add one or two cups of cooked rice and turn. Add all the other ingredients that have already been sautéed and fried, turn everything.
  7. Cut the ham into fine cubes / slices and place on the rice. Cover the wok, turn off the heat and steep / let rest for 5 minutes.
  8. The dish is ideal as a leftover meal, it works even without precise quantities. With two cups of cold rice, this is enough for four people. If you only have one cup of rice from the previous day, adjust the amount with more vegetables.
  9. You can use frozen vegetable mixes or simply cut leftover vegetables from the refrigerator into fine strips. Any vegetable except spinach, chard, cabbage or similar is suitable.
  10. Serve with soy sauce.
