Ingredients

  • 3 tablespoon white wine vinegar
  • 1 tablespoon flour
  • 500 g black salsify (s)
  • 1 onion (s)
  • 1 clove garlic
  • 3 tablespoon olive oil
  • 2 teaspoons capers, (drained, glass)
  • some salt and pepper
  • 2 tablespoon lemon juice
  • 30 g cheese, Italian, e.., Grana Padano
  • 3 stalk / s basil

Instructions

  1. Mix white wine vinegar, flour and 1 liter of water. Wash salsify, peel, cut off both ends, wash again and cut diagonally into 1 cm thick pieces. Temporarily place in the vinegar water so that they do not discolour.
  2. Peel the onion, cut in half and cut across into thin half rings. Peel the garlic clove and chop finely. Drain the salsify.
  3. Heat the olive oil in a large, non-stick pan. Fry the salsify for 5 minutes over medium to high heat, turning occasionally. Add onions and fry for 3 minutes. Add the garlic and capers and fry for another 2 minutes. Finally, season with salt, pepper and lemon juice.
  4. Slice the hard cheese. Pluck the leaves from the basil. Sprinkle the salsify with cheese and basil on top.
