Ingredients

  • 600 g turkey breast, (also works with chicken breast or pork tenderloin)
  • 2 tablespoon butter
  • 1 tablespoon flour
  • 1 can coconut milk, (unsweetened)
  • 3 tablespoon applesauce (or freshly grated sweet apple)
  • 2 tablespoon curry
  • salt
  • milk
  • 1 banana (s), (not too ripe)
  • 2 peach (s), halved (fresh and ripe or canned)

Instructions

  1. Cut the meat into fine strips and fry well on all sides in a little oil. Take out of the pan and keep warm. Salt and pepper lightly. Sweat the butter with the flour in the pan while stirring (do not brown). Deglaze with the coconut milk and beat well with the whisk. Let simmer gently for about 2 minutes. If necessary, dilute with a little milk. Add the applesauce, the curry and the meat and let it steep for another 3 minutes. Season to taste with salt and pepper. Add the sliced banana and the peach halves cut into wedges and warm them up briefly (do not cook anymore). The banana and peaches can also be left out or tossed in a little butter separately in a pan and served with it.
  2. Basmati rice goes well with it.
