Ingredients

  • 4 slices white bread
  • 2 tablespoon olive oil
  • 8 slices cheese, (soft goat cheese)
  • 4 cup water
  • 2 cup / s sugar
  • 3 handfuls spruce shoots, young
  • 1 handful lemon balm
  • 1 clove garlic
  • 1 teaspoon sea salt, coarse
  • 100 ml olive oil
  • some flowers

Instructions

  1. Put some oil in two separate pans and fry the white bread slices or the goat cheese slices.
  2. Spruce tip syrup:
  3. Boil a syrup from the water and sugar, add the coarsely chopped spruce tips, bring to the boil and let it simmer gently. Let cool down and let stand for at least 24 hours. Then reduce the syrup to the desired consistency.
  4. Lemon balm pesto:
  5. Crush all ingredients in a mortar and let it steep.
  6. Take the toasted bread out of the pan, degrease on kitchen paper if necessary. Place the still warm cheese slices on top, serve with the spruce syrup and the pesto and decorate with flowers (here cornflower and stone clover).
  7. Since I always cook without a recipe and without scales, the quantities given are only approximate!
