Ingredients

  • 125 g bacon, diced
  • 3 tablespoon sour cream
  • 3 tablespoon natural yogurt
  • 75 g fresh oat cheese with herbs
  • 1 teaspoon butter
  • 2 small onions
  • 400 g flour
  • 2 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon salt
  • 250 ml water, warm

Instructions

  1. Put the flour in a bowl, make a well in the middle and add salt, oil and vinegar. Knead everything into a sticky dough. Vary with water and flour as required. Divide the dough into four portions and let rest for about 2 hours. Cover with a kitchen towel.
  2. Peel and finely dice the onions. Fry the bacon in the butter until crispy, then add the diced onions, sweat until translucent and then leave to cool.
  3. Make a cream from sour cream, natural yoghurt and fresh goat cheese. Stir in the bacon and onions.
  4. Preheat the oven to 200 ° C fan-assisted air.
  5. After the rest time, roll out four very thin flat cakes from the dough. Spread olive oil on top if necessary. Spread the bacon and onion cream on the flatbreads and roll them up like cigars.
  6. Place the rolls in the oven and bake for 15 to 20 minutes until they are tender brown. Serve hot.
