Ingredients
- 2 kg potato (s), cooked and peeled, cut into thin slices
- 0.5 liter ½ vegetable stock, very tasty, lukewarm
- 150 g bacon, diced
- 3 tablespoon, leveled mustard, medium hot
- 1 tablespoon sugar
- 2 stalk (s) lovage, chopped
- some chives, cut into rolls
- 5 tablespoon vinegar
- 7 tablespoon oil
- 1 large onion (s), chopped
- salt and pepper

- Put the sliced potatoes lukewarm in a bowl, add the mustard, vinegar, oil, salt and pepper.
- Boil the vegetable stock and season to taste very spicy. Fry the bacon and lightly sweat the onions. Then add the stock and the bacon and onion mixture to the potatoes and mix everything together.
- Let it steep for about an hour. Season to taste again and add seasoning if necessary.
