Ingredients

  • 1 meat sausage, in a ring
  • 1 large onion (s)
  • 250 ml water
  • 30 ml vinegar (white wine vinegar)
  • 20 ml oil
  • 1 teaspoon sugar
  • salt
  • 200 g beans, reen

Instructions

  1. Clean the beans, boil for three minutes, drain and immediately place in ice water. Peel the sausage and cut it into very thin slices. Make a marinade out of water, vinegar, oil, salt and sugar and whisk with a small whisk. Cut the onion into very thin rings. Put the sausage slices and onion rings in layers in a large glass bowl, slowly pouring over the marinade. Let it steep for at least two hours. Season to taste again before serving, it may be necessary to season with vinegar, salt and sugar. At the very end, add the blanched beans to the salad. If you add them to the salad earlier, they will lose their beautiful green color.
