Green Scrambled Eggs

Any fresh (or frozen) vegetables will work for this recipe – you can use green beans, cauliflower, green peas, corn, etc.

Ingredients

  • zucchini 100 g
  • broccoli 5-6 inflorescences pcs.
  • onion 1 small onion pcs.
  • sweet pepper 1 pc.
  • tomato 1 pc.
  • garlic 1 clove
  • egg 2 pcs.
  • salt
  • black pepper
  • olive oil 2 tablespoons

Directions

Prep time: 20 minutes
Cook time: 5 minutes
Total time: 25 minutes

Finely chop the onion, fry in a preheated pan until transparent. Cut the zucchini into small cubes, divide the broccoli into inflorescences, add to the onion.

Thinly chop pepper and tomato, add to vegetables, salt, and pepper, stir and simmer for 7-10 minutes, add chopped garlic at the end.

Make holes in the vegetable mass and break the eggs into them, cover and cook until the eggs set.
