Ingredients

  • 750 g potato (s), (floury)
  • salt
  • 1 onion (s)
  • 300 g minced meat, mixed
  • 1 egg (s)
  • 1 tablespoon breadcrumbs
  • pepper
  • Paprika powder, (noble sweet)
  • 2 apples
  • 12 slices bacon
  • Oil, for the skewers
  • Clarified butter
  • 150 g whipped cream
  • 100 ml meat stock, (instant)
  • 200 ml milk
  • 1 tablespoon butter

Instructions

  1. Peel, wash and quarter the potatoes and cook in salted water for about 20 minutes.
  2. In the meantime, peel the onion and dice it finely. Mix the minced meat with the onion, egg and breadcrumbs in a bowl. Season with salt, pepper and paprika.
  3. Shape the mince mixture into 24 balls.
  4. Wash, clean, cut apples into eighths. Cut the bacon into pieces about 5 cm wide.
  5. Place the bacon, apples and meatballs alternately on oiled skewers.
  6. Heat the lard in a pan and fry the skewers for 5 minutes. Take out of the pan and keep warm.
  7. Deglaze the roast with the cream and stock and simmer for another 2-3 minutes.
  8. Heat milk. Drain and mash the potatoes, mix with butter and milk, season with salt.
  9. Drizzle the sauce over the skewers and mashed potatoes. Serve garnished with lettuce and cress.
