Cut the neck of the pork loin into large cubes. Peel the onions, carrots, celery and potatoes and also cut into cubes.
Put some oil in a saucepan, heat it and sweat the smoked pork chops in it. Add onions, carrots, celery and potatoes and sweat with them. Add the bay leaves, allspice and savory and pour in the water or vegetable stock until everything is well covered. Bring to the boil and cook until the vegetables are cooked through. Then add the beans, bring to the boil again and season the stew with salt, pepper and a little sugar.
