Ingredients

  • 400 g wheat flour
  • 200 g rye flour
  • 15 g salt
  • 20 g fresh yeast
  • 330 ml beer (Guinness), lukewarm
  • 120 ml water, lukewarm
  • possibly flour for dusting

Instructions

  1. Mix the beer and water. Dissolve the yeast in the lukewarm mixture. Mix the flour and salt in a bowl and add the yeast water. Mix with a fork until you get a smooth batter.
  2. Then cover and let rise for 1.5 hours. The volume should have increased significantly.
  3. Cut 3 baguettes or several rolls from the dough and place in a baguette or roll form. Do not knead, shape or otherwise work the dough. Dust with flour to taste.
  4. Bake at 240 ° C hot air in the preheated oven on the middle rack with a bowl of water on the oven floor for about 25 minutes.
