Ingredients

  • 500g flour
  • 3 teaspoons baking powder, corresponds to approx. 12 g
  • 1 teaspoon salt
  • 1 tablespoon herbs, dried
  • 50 g cheddar cheese, or medieval Gouda, rated
  • 25 g parmesan, rated
  • 125 g butter
  • 3 egg (s)
  • 100 ml buttermilk
  • 50 g crème léère with herbs
  • cheese, grated, for sprinkling
  • Chilli flakes or chilli powder optional

Instructions

  1. Mix the dry ingredients and cheese in a large bowl, mix in the butter in flakes. Add the eggs with the buttermilk and crème légère. Knead with the dough hook and briefly knead into a firm dough with your hands on the work surface. It doesn`t matter if there are a few small bits left in it.
  2. Let the dough stand in a cool place for 10 minutes. Meanwhile preheat the oven to 200 ° C.
  3. Roll out the dough to about a finger high or flatten it and cut triangles or squares. Alternatively, cut out circles with a glass. Quickly squeeze the leftover dough together and divide.
  4. Place the dough pieces on baking sheets lined with baking paper, sprinkle with grated cheese if you like and bake in the preheated oven for approx. 15 - 20 minutes at 180 ° C, depending on the size. The scones rise strongly.
  5. The scones can be baked and frozen unbaked. The baking time for frozen scones is a little longer. Thaw the baked scones at room temperature and briefly heat them in the microwave.
  6. As herbs are such. B. rosemary, thyme or herbs of Provence. With a little chilli powder or chilli flakes, the scones will be spicier.
