Ingredients

  • 1 bunch spring onion (s)
  • 300 g spinach, fresh or frozen
  • 1 bunch mint
  • 1 bunch rocket
  • 1 bunch dill
  • 250 g feta cheese
  • 250 g ricotta
  • 4 egg (s)
  • 5 tablespoon olive oil
  • 5 sheets filo pastry
  • 50 g breadcrumbs
  • salt and pepper
  • Nutmeg, freshly grated

Instructions

  1. Peel and wash the spring onions and cut into thin rings. Thaw spinach or wash and drain. Wash and dab the herbs and remove the leaves.
  2. Preheat the oven to 160 ° C fan oven.
  3. Steam the spring onions and all the herbs in 2 tablespoons of olive oil. Roughly chop the spinach and add, continue steaming until it has collapsed a little.
  4. Crumble the feta and mix with the ricotta, eggs, spinach mixture and breadcrumbs. Season with salt, pepper and nutmeg.
  5. Brush the filo pastry sheets with the remaining oil and place in a round springform pan. Pour in the prepared mass and fold the ends of the pastry sheets over it.
  6. Bake for about 35 minutes.
