Home-Salted Mackerel in Onion Marinade

Fast, simple and without chemicals! Try pickling mackerel at home in an onion marinade and you’ll love it!

Ingredients

  • Mackerel – 2-4 pcs.
  • Salt – 4 tbsp
  • Sugar – 2 tbsp
  • Onion peels – 3-4 handfuls
  • Water – 1 l
  • Bay leaf – 2 pcs.
  • Allspice peas – 4-5 pcs.
  • Coriander (seeds) – 5 pcs.
  • Vegetable oil (optional) – for greasing mackerel

Directions

  1. Prepare the fish and the rest of the ingredients.
  2. Rinse the onion husks, pour hot water, put on the stove and cook for 15-20 minutes. Then let it brew for another 10 minutes, so that the color of the broth becomes saturated, amber brown.
  3. Strain the broth, it should turn out to be 1 liter. If the broth is less, then you need to add hot water. Add salt, sugar to the broth, stir and let the marinade cool completely.
  4. Wash the mackerel, cut off the head and tails, remove all the insides. Rinse the fish thoroughly inside and outside again, pat dry with a paper towel.
  5. Put the mackerel in a container, cover with chilled marinade and add spices. Place a load on the fish. Leave the mackerel in the onion marinade for 2-3 days in the refrigerator or other cool place. Sometimes turn it over so that the fish is evenly salted and colored amber.
  6. Remove the finished fish from the marinade, dry it, if desired, grease with vegetable oil for shine.
