  • 2 liters water
  • 120 g salt
  • pepper
  • Paprika powder
  • Incense flour, (beech flour)

Instructions

  1. Soak the chicken legs in a 6% brine for 24 hours and put them in a cool place (for the brine, dissolve 120 g of salt in 2 liters of cold water).
  2. Take the chicken thighs out of the brine, place them on a wire rack and let them dry well or dry them with a clean cloth (paper towel).
  3. Pepper a little and add paprika powder and cook and smoke in the preheated smoker with a little smoking flour for 30 minutes at 150 ° C.
  4. The chicken legs also taste very good cold.
