Hot Vegetable Salad

Vegetables for this salad are stewed for only a few minutes, which allows you to preserve almost all the beneficial properties and appetizing appearance.
Servings: 4
Ingredients
- Asparagus (thin crunchy parts) – 120 g
- Green peas – 120 g
- Fava beans (garden beans) – 120 g
- Lettuce (with small leaves) – 2 heads of cabbage
- Green onions – 5 pcs.
- Butter – 50 g
- Garlic (minced) – 1 clove
- Fresh tarragon (chopped) – 1 teaspoon.
- Salt to taste
- Ground black pepper – to taste
How to make a hot vegetable salad
Directions
- Cut green onions into 4 pieces. In a skillet over medium-low heat, heat half of the butter puts the green onions and garlic, and fry for about 1 minute.
- Place the asparagus, green peas and fava beans in a skillet and stir. Pour water into the pan so that it only slightly covers the vegetables, simmer until soft, for a few minutes. Add salt and pepper to taste.
- Cut the lettuce heads into quarters, put in the pan, cook for about 3 minutes, remove the pan from the stove, add the remaining butter and all the tarragon to the vegetables, stir and serve the hot vegetable salad immediately.
