Hummus (Chickpea Snack)

Hummus is a popular oriental snack made from chickpea puree with sesame paste. This is a healthy and tasty dish. The mystery of the East. 🙂

Servings: 8

Ingredients

  • Dry chickpeas – 300 g
  • Sesame seeds – 50 g
  • Garlic – 3-4 cloves
  • Lemon juice – 4-7 tbsp (to taste)
  • Olive oil – 3 tbsp
  • Salt to taste
  • A mixture of spices (coriander, cumin, paprika and cumin) – to taste
  • Parsley (for serving) – to taste

Directions

  1. Prepare food.
  2. Rinse the chickpeas well and soak for 10-15 hours in cold water.
  3. Then rinse the chickpeas well again and cover with clean cold water.
  4. Boil. Cook over low heat, covered for 2 hours. Do not salt!
  5. In a dry frying pan over medium heat, fry the sesame seeds, stirring occasionally, until light golden brown (2-3 minutes).
  6. Peel the garlic. Grind the garlic with the sesame seeds in a blender until smooth. Add a tablespoon of olive oil. Mix. It turns out sesame paste (tahini).
  7. Grind boiled chickpeas in mashed potatoes with a blender.
  8. Add tahini and 300 ml of broth to the puree. Season with salt to taste and add lemon juice.
  9. Beat well.
  10. Place the finished hummus in a bowl. Refrigerate.Serve hummus with a little olive oil and spices. You can decorate with fresh herbs.
