Hummus with Olive Oil and Paprika

Ingredients

  • Chickpeas (raw) – 400 g
  • Tahini paste (sesame) – 80 g
  • Juice of one lemon (or to taste)
  • Olive oil – 30 ml
  • Ground paprika – 1 teaspoon
  • Greens – for decoration
  • Salt to taste
  • Water – 60 ml

Directions

  1. Pre-soak the chickpeas in cold water for at least 6 hours (preferably overnight).
  2. Boil the chickpeas over medium heat until soft (1.5-2 hours).
  3. During the cooking process, salt the chickpeas.
  4. We remove the formed foam.
  5. Grind the finished chickpeas in a food processor.
  6. Add sesame paste, salt to taste.
  7. Squeeze out lemon juice.
  8. Mix well, gradually adding water to get a homogeneous soft mass.
  9. We distribute the finished pasta on a plate, forming the sides.
  10. Drizzle with olive oil.
  11. Sprinkle with paprika.
  12. Decorate with fresh herbs.
